<Evaporation> transfers molecules from a <liquid> surface into the surrounding vapour. It can occur below the <boiling> temperature, and competes with condensation from the vapour. Its net rate depends on the surrounding <vapor pressure> and transport conditions. Removing <latent heat> through evaporation can cool the remaining liquid.
