Write $(x^Tb)^2=x^Tbb^Tx$ and put $C=A-bb^T$, which is symmetric. Differentiating this <quadratic form> gives
$$
\boxed{\nabla g(x)=2Cx=2Ax-2(x^Tb)b,\qquad H_g(x)=2(A-bb^T).}
$$
Unlike $A$, $C$ need not be a <positive-definite matrix>. Its behaviour must be checked before classifying the <stationary point>.
