Choose an orthonormal basis ei of the tangent space at p and the unit-speed geodesics with initial velocities ei. Their covariant accelerations vanish, so (f∘γi)′′(0)=Hessgf(ei,ei). Taking the metric trace of the Riemannian Hessian proves the formula for Δ=div∇. The positive Laplace-Beltrami operator has the opposite sign.
